Red, White & Blue Cheesecake Salad - Wayfair Sponsored Post

Today I have the most delicious dessert recipe to share, it would be perfect for a 4th of July celebration!
As a member of the Wayfair Homemakers, I get to participate in fun opportunities like the Red, White & Chew Challenge! For this challenge, we picked our favorite red, white, & blue dessert to share.
As a certified cheesecake lover, I chose a spin on traditional cheesecake and decided to share Red, White & Blue Cheesecake Salad! Yum!! It's so much easier than making cheesecake too!
This cheesecake salad is so easy to make!
Red, White & Blue Cheesecake Salad
Ingredients:
2 lbs. fresh strawberries1-pint blueberries (you could add more if you like lots of blueberries!)
1 - 8 oz. package of cream cheese (at room temperature)
1 tsp. vanilla extract
Pinch of salt
2 cups powdered sugar
1 large (16 oz.) tub of Cool Whip (thawed)
4 cups mini marshmallows
Make it:
You need to prep the berries before preparing the cheesecake mixture so it won't set up too fast so, wash the berries.Remove the strawberry stems and cut them into small pieces, about the size of the mini marshmallows. Measure out the 4 cups of marshmallows and set these aside.
In a mixer (or with a large bowl and hand mixer) beat the cream cheese, vanilla extract, salt, and powdered sugar together until soft and creamy.
Be sure and save that beater to lick when you are finished!! 😋
Add half of the Cool Whip and gently stir until smooth. Fold in the rest of the Cool Whip, strawberries, blueberries, and marshmallows.
And voila, you now have a delicious dessert!
I think it would also be good to crumble up some graham cracker crumbs and put them in the bottom of the bowl to resemble the crust! I have also seen this recipe with sliced bananas added too, that would be good!
My parents are coming over Sunday to celebrate a belated Father's Day and my dad's birthday since we couldn't do it on the actual day and we'll be enjoying this dessert out on my patio after shish-kabobs on the BBQ!

That looks delicious Tania! I love cheesecake so I know I'll love this too. If I didn't already have a bunch of salads made for this long weekend I'd try making this, but I'll definitely give it a go in the future. Pinning.
