A Keto Sweet Treat for Christmas!

02 December
I am trying to eat keto and lose some weight but it's so hard, especially this time of year with all the Christmas candy that is available. It's for sale in the stores, some friends and family like to bake and gift their homemade treats to their loved ones, and it seems like someone is always leaving something in the break room at work!

I am determined to lose some weight though! I got my hair done a couple of weeks ago and my hairdresser has lost 30 pounds on keto (it had only been about 2 months since I'd seen her last!) and yesterday I went bra shopping... oy vey... how depressing 😞

Today is Day 10 of the 12 Days of Christmas blog hop and our posts are holiday desserts and treats. I thought it would be great to include something keto-friendly in the list of sweet treats!

I cannot take credit for this recipe but I decided to give it a go to see how it tastes! The recipe is from Hip2Keto, one of my favorite keto blogs, they have some amazing recipes and this sweet treat did not disappoint! The recipe for Keto "Christmas Crack" Pecan Toffee can be found on their blog.

Here is my try at making it.

For the most part, I am a bargain shopper so a lot of the ingredients I used are not name-brand but they are just as good... sometimes better! 😉

This Christmas Crack Pecan Toffee is very easy to make! You just melt the butter in a small pan...

Then add the pecans and toast them a little bit. Be careful not to burn it, I almost did!

Then you add the sweetener, vanilla, salt, and cream and cook it until it thickens up a little bit. Mine didn't really get all that thick and it still worked. Then spread it out into a pan and put it into the fridge for about a half-hour.

Then you break up the Lilly's chocolate bar and melt it in the microwave. Once it's melted, spread it over the pecans and then freeze for about a half-hour.

Break it up into pieces and enjoy a sweet treat that is keto-friendly!! They only have 2g of net carbs per piece😃

I gotta say... I'm impressed! It's very tasty! I cut the recipe in half because I wasn't sure I would like it (sometimes keto sweets aren't very good), but I will definitely be making some more of this!
