Keto Raspberry Cheesecake Bites

Valentine's Day is a day that typically involves lots of candy... boxes of chocolates and conversation hearts, pretty much anything heart-shaped and sugary!
Well, that won't work when you are trying to stick to a low carb, low sugar keto diet so I found a yummy, treat that will work!
Keto Raspberry Cheesecake Bites

I found the recipe for Raspberry Cheesecake Bites at Health Starts in the Kitchen by Hayley.
These are so easy to make and really good!! You will need a silicone mold. I used this heart-shaped one from Michael's: Heart Silicone Mold by Celebrate It.
Ingredients
Directions
- Add the cream cheese, butter, and MCT or coconut oil to a mixing bowl and mix until smooth.
- Add the raspberries and sweetener to the bowl and mix until smooth.
- Transfer the mixture to a ziplock bag and snip off one corner to use it as a piping bag.
- Pipe the mixture into the mold.
- Freeze until solid, about 30 minutes.
- Pop the frozen bites out of the mold, store them in the freezer in an airtight container.

Carbohydrates: 2g, Protein: 1g, Fat: 5g, Fiber: 1g, Sugar 0.4g
The original recipe called for using a food processor. I do not have one so I used my KitchenAid mixer and I think it worked just fine!
Once it is all mixed up, transfer it to a ziplock back. Snip off one corner and use this as a piping bag to easily transfer into the mold.
Once the mold is filled, tap it on the counter several times to get the mix down into each heart and get any air bubbles out.
Freeze them until solid, about 30 minutes. Once they are frozen, pop them out of the molds (so easy with a silicone mold!) and then try not to eat them all!
